CHICKEN SALAD


 INGREDIENTS:


For the Chicken:

2 chicken breasts 

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder

Salt and pepper to taste

Juice of 1 lime.


FOR THE SALAD 🥗🥗🥗:

4 cups mixed greens (such as spinach, arugula, or lettuce)

1 avocado, diced

1/4 red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 cup cilantro, chopped

1/4 cup crumbled feta cheese or cotija cheese (optional).


FOR THE DRESSING:

1/4 cup mayonnaise (or Greek yogurt for a lighter version)

2 tablespoons lime juice

1 tablespoon chipotle in adobo sauce, finely chopped (or 1 teaspoon chipotle powder)

1 tablespoon olive oil

Salt and pepper to taste.


INSTRUCTIONS:


Cook the chicken:

In a small bowl, combine the cumin, smoked paprika, garlic powder, onion powder, chili powder, salt, pepper, and lime juice. Rub the spice mixture over both sides of the chicken breasts.


Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked and golden brown. Once done, let the chicken rest for a few minutes before slicing into strips or cubes.


PREPARE THE DRESSING:

In a small bowl, whisk together the mayonnaise (or Greek yogurt), lime juice, chipotle in adobo sauce (or chipotle powder), olive oil, salt, and pepper. Adjust seasoning as needed to suit your taste.


ASSEMBLE THE SALAD 🥗:

In a large bowl, toss the mixed greens, avocado, red onion, cherry tomatoes, and cilantro together.


Add the cooked chicken on top and drizzle with the chipotle lime dressing.


Sprinkle with crumbled feta cheese or cotija cheese, if using.


SERVE:

Toss everything together to coat the ingredients in the dressing, and serve immediately. Enjoy your keto-friendly, flavorful salad!
