Spicy Shrimp Burrito Bowl


This Spicy Shrimp Burrito Bowl combines marinated shrimp, cilantro-lime rice, black beans, and fresh corn salsa, topped off with creamy chipotle mayo for an irresistible flavor blend! Perfect for a light, zesty, and colorful meal that’s easy to assemble and bursting with flavor. 🌞✨


Ingredients:

For the Spicy Shrimp:

1 lb shrimp, peeled and deveined 🍤

2 tbsp olive oil 🌿

1 tbsp lime juice 🍋

1-2 tsp chili powder 🌶️

1/2 tsp smoked paprika 🌶️

1/2 tsp cumin 🌿

1 clove garlic, minced 🧄

Salt & pepper to taste 🧂


For the Cilantro-Lime Rice:

1 cup jasmine or basmati rice 🍚

1 1/2 cups water or chicken broth 💧

1 tbsp lime juice 🍋

1/4 cup fresh cilantro, chopped 🌿

Salt to taste 🧂


For the Corn Salsa:

1 cup corn kernels (fresh, frozen, or canned) 🌽

1/2 cup cherry tomatoes, diced 🍅

1/4 cup red onion, finely diced 🧅

1 tbsp lime juice 🍋

1/4 cup fresh cilantro, chopped 🌿

Salt & pepper to taste 🧂


Additional Toppings:

1 cup black beans, rinsed and drained 🫘

1 avocado, sliced 🥑

1/4 cup shredded cheese (optional) 🧀


For the Chipotle Mayo:

1/4 cup mayonnaise 🥄

1 tbsp chipotle sauce (or 1 chipotle pepper in adobo, minced) 🌶️

1 tsp lime juice 🍋


Instructions:


Marinate the Shrimp:

In a bowl, combine olive oil, lime juice, chili powder, smoked paprika, cumin, garlic, salt, and pepper. Toss the shrimp in the marinade and set aside for 15-20 minutes.


Cook the Cilantro-Lime Rice:

In a pot, combine rice with water or broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until rice is tender. Fluff with a fork, then stir in lime juice, cilantro, and a pinch of salt.


Prepare the Corn Salsa:

In a bowl, mix corn, cherry tomatoes, red onion, lime juice, cilantro, salt, and pepper. Set aside.


Cook the Shrimp:

Heat a skillet or grill pan over medium heat. Cook the marinated shrimp for 2-3 minutes per side, until they are pink and opaque.


Make the Chipotle Mayo:

In a small bowl, mix mayonnaise, chipotle sauce, and lime juice until smooth. Adjust spice level to taste.


Assemble the Burrito Bowl:

Layer the cilantro-lime rice in bowls, followed by black beans, corn salsa, cooked shrimp, and avocado slices. Drizzle with chipotle mayo and add shredded cheese if desired.
