Simple Green Salad Recipe
Ingredients
* 2 small heads of soft lettuce, butter lettuce or similar
* Half recipe of Lemon Vinaigrette
* 1 Persian cucumber, thinly sliced
* ¼ cup shaved Parmesan cheese
* 2 tablespoons pepitas
* 1 avocado, thinly sliced
* ¼ cup microgreens
* Flaky sea salt (optional)
* ½ cup raw almonds
* ½ tablespoon tamari
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Toss the almonds with tamari and spread them on the baking sheet. Bake for 10 to 14 minutes or until browned. Let cool for 5 minutes.
2. Toss the lettuce with a few spoonfuls of Lemon Vinaigrette in a large bowl.
3. Add the cucumber, shaved Parmesan, pepitas, avocado, and tamari almonds.
4. Drizzle with additional Lemon Vinaigrette, sprinkle with microgreens, and season with flaky sea salt if desired.
