Spicy Avocado Salad
Ingredients:
• 2 ripe avocados, diced
• 1/2 cucumber, thinly sliced
• 2 tablespoons chopped cilantro
• 2 tablespoons chopped green onions (scallions)
• 1 fresh chili, sliced (adjust to your heat preference)
• 1 tablespoon sesame seeds (optional for garnish)
For the Dressing:
• 2 tablespoons soy sauce (or tamari for gluten-free)
• 1 tablespoon rice vinegar
• 1 tablespoon sesame oil
• 1 teaspoon honey or maple syrup
• 1 teaspoon fresh lime juice
• 1/2 teaspoon grated fresh ginger
• 1/4 teaspoon garlic powder
• Pinch of red pepper flakes (optional, for extra heat)
Instructions:
1. Prepare the Salad:
o In a large mixing bowl, combine the diced avocados, sliced cucumber, chopped cilantro, chopped green onions, and sliced fresh chili.
2. Make the Dressing:
o In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, lime juice, grated ginger, garlic powder, and red pepper flakes (if using) until smooth.
3. Assemble the Salad:
o Drizzle the dressing over the salad ingredients and toss gently to combine, being careful not to mash the avocados.
