Spiralized Cucumber Mango Salad


Ingredients


• Produce:

o 1 large avocado, pitted and diced

o 1 large cucumber

o 1 lime, juiced

o 1 firm, ripe mango, diced

o 1/3 cup red onion, chopped


• Baking & Spices:

o 1/4 tsp kosher salt


• Dairy:

o 1/2 cup goat cheese, crumbled


Instructions


1. Prepare the Ingredients:

o Use a spiralizer to spiralize the cucumber into thin ribbons. If you don’t have a spiralizer, you can slice the cucumber into thin rounds or half-moons.


o Peel and dice the mango into bite-sized pieces.


o Pit and dice the avocado.


o Chop the red onion finely.


o Juice the lime.


2. Assemble the Salad:

o In a large bowl, combine the spiralized cucumber, diced mango, avocado, and chopped red onion.


3. Add the Dressing:

o Squeeze the lime juice over the salad and sprinkle with kosher salt. Toss everything gently to mix the ingredients and coat them with the lime juice.


4. Top with Goat Cheese:

o Sprinkle the crumbled goat cheese over the top of the salad and toss gently to combine.


5. Serve:

o Serve immediately as a refreshing side dish or light meal.
