Avocado Salad🥑🥑🥑
Ingredients:
• Produce:
o 2 large ripe avocados, cut into quarters and then sliced into 1 cm (0.4") slices
o 3 cucumbers, thinly sliced
o 1/4 red onion, thinly sliced
o 2 tbsp fresh cilantro (coriander) leaves, chopped
o 2 tbsp fresh dill, chopped
• Condiments:
o 3 tbsp fresh lime juice (about 1-2 limes)
• Baking & Spices:
o 1/4 tsp black pepper
o 1/4 tsp chili flakes (or red pepper flakes)
o 3/4 tsp cooking or kosher salt
• Oils & Vinegars:
o 3 tbsp extra virgin olive oil
Instructions:
1. Prepare the Vegetables:
o Slice the avocados into quarters, remove the pit, and carefully cut the flesh into 1 cm (0.4") slices.
o Thinly slice the cucumbers. You can peel them if you prefer, but leaving the skin on adds extra crunch and color.
o Thinly slice the red onion, keeping the pieces as small as possible for a nice bite.
2. Make the Dressing:
o In a small bowl, whisk together the lime juice, extra virgin olive oil, black pepper, chili flakes, and salt until well combined.
3. Assemble the Salad:
o In a large salad bowl, gently combine the sliced avocados, cucumbers, red onion, cilantro, and dill. Be careful not to mash the avocado—keep the slices intact for the best texture.
4. Toss and Serve:
o Drizzle the dressing over the salad and gently toss everything together to coat evenly.
o Taste and adjust the seasoning with more salt, pepper, or lime juice if needed.
o Serve immediately as a fresh, light side dish or light lunch.
Optional Additions:
• Add a handful of cherry tomatoes for a burst of color and sweetness.
• For extra protein, top the salad with grilled chicken, shrimp, or chickpeas.
