Bacon, Egg, and Avocado Salad


Ingredients:

🥬 Arugula or mixed greens (2 cups)

🥓 3 slices of crispy cooked bacon (chopped)

🍅 Cherry tomatoes (halved)

🥑 1 avocado (diced)

🥚 2 soft-boiled eggs (halved)

🧀 Grated Parmesan (optional, for garnish)


Dressing:

🍋 2 tablespoons fresh lemon juice

🫒 2 tablespoons olive oil

🧂 Salt and pepper to taste

🌶️ A pinch of chili flakes or smoked paprika (optional)


Instructions:


Cook the Bacon:

Fry bacon until crispy. Let it cool, then chop into bite-sized pieces.


Prepare the Eggs:

Boil eggs to your preferred doneness (6-7 minutes for soft-boiled). Peel and halve.


Assemble the Salad:

Lay the arugula or greens as a base in a large bowl.


Arrange the bacon, avocado, tomatoes, and eggs on top.


Make the Dressing:

Whisk together lemon juice, olive oil, salt, pepper, and chili flakes.


Combine and Garnish:

Drizzle the dressing over the salad.


Sprinkle with Parmesan and freshly ground pepper.


Serve and Enjoy:


Serve immediately as a hearty meal or shareable side.
