Coconut Lime Fish with Avocado Salsa

Ingredients:


For the Fish:


4 white fish fillets (such as cod, halibut, or tilapia)

1/2 cup coconut milk

Zest and juice of 1 lime

1 tablespoon olive oil or coconut oil

Salt and pepper, to taste

1/4 teaspoon cayenne pepper or chili powder (optional, for a bit of heat)


For the Avocado Salsa:

1 ripe avocado, diced

1/2 red onion, finely chopped

1/2 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 1/2 lime

Salt and pepper, to taste

Fresh cilantro, lime wedges, and shredded coconut (optional) for garnish


Instructions:

Marinate the Fish:

Prepare the marinade: In a bowl, combine the coconut milk, lime zest, lime juice, salt, pepper, and cayenne pepper (if using). Mix well.


Marinate the fish: Place the fish fillets in a shallow dish and pour the coconut-lime marinade over them, making sure they’re well-coated. Let the fish marinate for 15-20 minutes in the refrigerator.


Prepare the Avocado Salsa:

Combine salsa ingredients: In a bowl, mix together the diced avocado, chopped red onion, cherry tomatoes, chopped cilantro, and lime juice. Season with salt and pepper to taste. Set aside.


Cook the Fish:
