Baked Stuffed Salmon with Spinach & Feta


A delicious and elegant dish featuring tender salmon fillets stuffed with a creamy spinach and feta filling. Perfect for a special dinner or a healthy weeknight meal!


📝 Ingredients:

4 salmon fillets, skinless (about 6 oz each) 🐟

2 tablespoons olive oil 🫒

3 cups fresh spinach, chopped 🍃

1/2 cup feta cheese, crumbled 🧀

2 cloves garlic, minced 🧄

1/4 cup cream cheese, softened 🧀

1 tablespoon lemon juice 🍋

1/2 teaspoon dried oregano 🌿

Salt and pepper, to taste 🧂

Lemon wedges, for serving 🍋


🍳 Instructions:


1️⃣ Prepare the Filling:

In a skillet, heat 1 tablespoon olive oil over medium heat.


Add the minced garlic and sauté for 1 minute until fragrant.


Add the chopped spinach and cook until wilted, about 3-4 minutes.


Remove the spinach from the heat and let it cool slightly.


In a bowl, mix the cooked spinach with feta cheese, cream cheese, lemon juice, and dried oregano.


Season the filling with salt and pepper to taste.


2️⃣ Stuff the Salmon:

Preheat the oven to 375°F (190°C).


Using a sharp knife, carefully cut a slit along the side of each salmon fillet to create a pocket for stuffing. Be careful not to cut all the way through.


Stuff each fillet with an equal amount of the spinach and feta filling.


3️⃣ Bake the Salmon:

Place the stuffed salmon fillets on a lightly greased baking sheet.


Drizzle the fillets with the remaining olive oil and season with salt and pepper.


Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.


4️⃣ Serve:

Serve the baked stuffed salmon with lemon wedges on the side for extra flavor.
