Ingredients:

🥫 Chickpeas (1 cup, cooked or canned, drained and rinsed)

🥫 Kidney beans (1 cup, cooked or canned, drained and rinsed)

🫑 Green bell pepper (1, diced)

🍅 Tomatoes (2 medium, diced)

🧅 Red onion (1 small, finely chopped)

🌽 Sweet corn (1 cup, cooked or canned)

🌿 Fresh parsley (for garnish)

🌶️ Red chili flakes (optional, for a spicy kick)


Dressing:

🍋 Lemon juice (3 tbsp)

🫙 Olive oil (2 tbsp)

🧂 Salt and pepper (to taste)

🌿 Dried oregano (1 tsp)

🧄 Minced garlic (1 clove, optional)


Instructions:


Prepare the Ingredients

Dice the bell pepper, tomatoes, and onion. Rinse and drain the beans and corn.


Layer the Salad

In a large serving dish, layer the chickpeas, kidney beans, bell pepper, tomatoes, onion, and corn in colorful rows.


Make the Dressing

In a small bowl, whisk together lemon juice, olive oil, salt, pepper, oregano, and garlic (if using).


Drizzle and Garnish
