Grilled Egg and Asparagus Sandwich


Ingredients

* 4 slices bread (preferably sourdough or whole grain)

* 2 eggs, lightly beaten

* 100 g asparagus, trimmed

* 4 slices cheese (cheddar or Swiss)

* Salt and pepper to taste

* 2 tbsp olive oil (for greasing)


Instructions

1. Preheat a grill pan or skillet over medium heat and brush with olive oil.


2. Add the asparagus to the pan and cook for 3-4 minutes, turning occasionally, until tender and slightly charred. Remove from the pan and set aside.


3. In the same pan, add the eggs and cook them over medium-low heat, stirring gently, until scrambled and cooked through. Season with salt and pepper to taste.


4. While the eggs are cooking, toast the slices of bread on the grill pan until golden brown on both sides.


5. Once the bread is toasted, layer a slice of cheese on each slice of bread.


6. Place the scrambled eggs on two slices of bread, followed by the grilled asparagus and another slice of cheese.

7. Top with the remaining slices of bread to form the sandwiches.


8. Cook the sandwiches in the grill pan for an additional 2-3 minutes on each side until the cheese is 

melted and the bread is golden and crispy.


9. Remove from the pan and slice in half to serve.
